What is Japanese Sencha green tea?

The Hunan Province in China produces some excellent Sencha green teas. Early in the new season the tea is a bright emerald green. Sencha tea is produced by steaming freshly plucked green leaf. In the next step, the leafs get rubbed either by machine or by hand for the needle-like tea leaf structure. The rubbed leaf is then pan fried or basket fired. As a result, Sencha has a distinctive glossy, almost waxy, appearance.
